Please note: the filo pastry is store bought and not made during the class, this is a class about making the Bulgarian Banitza pie not learning how to make filo.

What’s it all about?

Unleash your culinary creativity as you dive into the art of filo pastry—those delicate, paper-thin layers that transform simple ingredients into something seriously impressive. In this hands-on Bulgarian cooking class, you won’t just follow a recipe—you’ll build skills you’ll actually use again.

You’ll learn how to handle filo with confidence (no more tearing panic), explore versatile fillings and techniques, and walk away knowing how to create a crowd-pleasing pastry that looks as good as it tastes.

Together, you’ll make banitsa—a classic Bulgarian pie layered with egg, cheese, and spinach. Think spanakopita’s cousin, but richer, crispier, and unapologetically indulgent.

Led by Sonya, an experienced food educator, this class blends cultural storytelling with practical know-how. You’ll leave not just with new skills, but with a deeper appreciation of the generous, food-loving spirit at the heart of Bulgarian cuisine.
