What’s it all about?

Tacos, the most identifiable gift from Mexico to the world. In Melbourne there has been a recent explosion of restaurants offering pulled pork, fish and chicken tacos, but with limited options for the vegetarians.

Vegetarian tacos don’t have to be limited to tofu or soggy zucchini. Learn how to prepare a delicious and simple recipe using roasted and breaded cauliflower, shredded roasted coconut and a vibrant pickled purple cabbage. Plus we’ll lace it with a succulent avocado mint sauce and learn how you can make your own tortillas from scratch!

Other options will be also given, so you have plenty of options for your Tuesday taco nights.

What will we cover?

Did you know that meat tacos were not actually that common? The Aztecs and other groups from Mexico didn’t have large animals! Their tacos were mostly made with fresh vegetables and herbs.

We’re going to get in touch with this more traditional style of taco and learn how to create an awesome blend of flavours.

In the workshop there will be demonstrations to show you how to prepare the different ingredients. Plus we will learn how to prepare fresh blue tortillas on the spot! And of course, we’ll sample subtle variations to the salsas, garnishes and tortillas. The salsa contains mayonnaise but all other ingredients are vegan friendly.

Who will be teaching?

Coral profile pictureCoral is a Mexican archaeologist who has studied the ancient diet of the Maya people in the south of Mexico. She has more than 15 years of experience as an archaeologist and has worked in many parts of Mexico and more recently in Australia. With the information she has gathered from her studies, she has set a small catering company where she cooks traditional dishes using Prehispanic ingredients and methods.
